Anderson Chili
Won first prize in 2005 Vancouver chili cook-off
- 2 lbs stewing beef
Cook meat over medium heat in melted shortening until meat is grey in color.
Add hot sauce, tomato sauce, bouillon cubes and water just to cover. Simmer, covered, 40 to 60 minutes, stirring occasionally. Add water if needed.
In a small bowl, combine the chili powder, cumin, onion powder, garlic powder, msg, salt, white pepper and cayenne.
Stir in 1/3 of the spice mix and add beef broth as needed. Simmer for another hour.
During the last 1/2 hour, add another 1/3 of the spice mixture. Continue cooking, adding beef broth as needed. In the final 15 minutes, add the remaining and continue cooking. In the last 5 minutes, taste for seasoning and adjust chili powder, cumin, and salt if needed.
